Ingredients
1 lb (450g) cremini or white button mushrooms, cleaned and trimmed
1/3 cup olive oil
1/4 cup white wine vinegar or apple cider vinegar
3 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)
1/2 tsp dried oregano
2 tbsp fresh parsley, chopped
Juice of 1/2 lemon
Instructions
- In a skillet over medium heat, add mushrooms and a few tablespoons of water. Cover and steam for 5–6 minutes until softened. Drain any liquid.
- In a bowl, whisk together olive oil, vinegar, garlic, salt, pepper, red pepper flakes, oregano, and lemon juice.
- Add mushrooms to a large bowl or jar. Pour marinade over while mushrooms are warm. Add parsley and toss to coat.
- Refrigerate for at least 4 hours or overnight. Stir occasionally. Serve chilled or at room temperature.
