Ingredients
200g pumpkin puree
300ml sweetened condensed milk
350ml evaporated milk
3 eggs
150g granulated sugar
1 tsp vanilla extract
1 1/2 tsp pumpkin pie spice
Instructions
1. In a saucepan over medium heat, melt the granulated sugar until it becomes golden amber. Pour immediately into a baking dish, coating the bottom evenly. Let harden.
2. In a blender or bowl, mix pumpkin puree, sweetened condensed milk, evaporated milk, eggs, vanilla extract, and pumpkin pie spice until smooth.
3. Pour mixture over the hardened caramel in the dish.
4. Place baking dish in a larger tray filled with 1 inch of hot water.
5. Bake at 350°F (175°C) for 50–60 minutes or until the center is set.
6. Cool to room temperature, then refrigerate for at least 4 hours.
7. To serve, loosen edges with a knife and invert onto a plate.
