Ingredients
1 pound large shrimp, peeled and deveined
8 ounces linguine or angel hair pasta
2 tablespoons olive oil
3 tablespoons butter
4 cloves garlic, minced
1/3 cup dry white wine
2 tablespoons lemon juice
1/4 teaspoon red pepper flakes
1/4 cup chopped parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/4 cup of pasta water, then drain.
2. In a large skillet, heat olive oil over medium-high. Add shrimp in a single layer and cook for 1–2 minutes per side until pink. Remove from skillet and set aside.
3. Reduce heat to medium and melt butter in the same skillet. Add garlic and red pepper flakes; cook until fragrant, about 1 minute.
4. Pour in white wine and simmer until reduced by half.
5. Stir in lemon juice, salt, and black pepper. Simmer 1 minute more.
6. Return shrimp and add cooked pasta. Toss to coat. Add pasta water if needed to loosen the sauce.
7. Sprinkle with fresh parsley and serve hot.
Notes
Use fresh lemon juice for best flavor, not bottled.
Don’t overcook the shrimp—they should just turn pink and firm up.
