Ingredients

1 lb ground beef (or sausage)

1 (10 oz) can Rotel tomatoes (with green chilies)

1 lb Velveeta cheese, cubed

Optional:

1/2 cup diced onions

1/2 tsp garlic powder

1 small can diced green chilies

Fresh cilantro (for garnish)


Instructions

  1. Heat a skillet over medium heat and cook ground beef (and onions if using) until browned. Drain excess grease.
  2. Stir in Rotel tomatoes (undrained) and mix well.
  3. Reduce heat to low and add cubed Velveeta cheese.
  4. Stir until cheese is fully melted and smooth.
  5. Add optional spices or green chilies if desired.
  6. Transfer to a serving bowl and garnish with cilantro or extra tomatoes.
