Ingredients

1 cup unsalted butter, softened

1 1/4 cups brown sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

3 cups old-fashioned oats

4 ounces cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

3 tablespoons eggnog

1/2 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg


Instructions

1. Cream the butter and brown sugar until fluffy.

2. Beat in eggs and vanilla until well combined.

3. In a separate bowl, whisk flour, baking soda, salt, cinnamon, nutmeg, and oats.

4. Gradually add dry ingredients to wet, mixing until combined. Chill dough 30 minutes.

5. Preheat oven to 350°F. Scoop dough onto baking sheets and bake 10–12 minutes. Let cool.

6. Beat cream cheese and butter until smooth. Add powdered sugar, eggnog, vanilla, cinnamon, and nutmeg. Beat until fluffy.

7. Pipe or spoon filling onto one cookie and sandwich with another. Serve or chill.
