Ingredients

1 tablespoon olive oil

1 medium yellow onion, diced

2 cloves garlic, minced

1 pound ground beef

1 packet taco seasoning (about 1 ounce)

1 packet ranch seasoning (about 1 ounce)

1 can black beans, drained and rinsed (15 oz)

1 can kidney beans, drained and rinsed (15 oz)

1 can corn, drained (15 oz)

1 can diced tomatoes with green chiles (10 oz)

3 cups beef broth

Toppings: shredded cheddar cheese, sour cream, jalapeños, cilantro, tortilla chips (optional)


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.

2. Add minced garlic and cook for 1 minute until fragrant.

3. Add ground beef and cook until browned. Drain excess grease.

4. Stir in taco seasoning and ranch seasoning until beef is coated.

5. Add black beans, kidney beans, corn, diced tomatoes (with juice), and beef broth. Stir well.

6. Bring to a boil, then reduce heat and simmer for 20-25 minutes uncovered.

7. Serve hot with your favorite toppings like cheese, sour cream, or crushed tortilla chips.

Notes

For extra spice, use hot taco seasoning or add cayenne pepper while simmering.
