Ingredients
1 1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 tsp kosher salt
1/2 tsp black pepper
1 tsp Italian seasoning
2 tbsp olive oil
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, thinly sliced
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
2 cups baby spinach
1/2 tsp red pepper flakes, optional
2 tbsp chopped fresh basil or parsley, for serving
Instructions
1. Pat chicken dry and season with salt, pepper, and Italian seasoning.
2. Heat olive oil in a large skillet over medium-high and sear chicken in a single layer until golden and cooked through, 6–8 minutes. Transfer to a plate.
3. In the same skillet, saute garlic 30 seconds. Stir in sun-dried tomatoes (and red pepper flakes, if using) 1–2 minutes.
4. Pour in heavy cream; simmer gently. Stir in Parmesan until smooth and slightly thickened.
5. Add spinach to wilt. Return chicken and any juices; toss to coat and simmer 2–3 minutes.
6. Adjust seasoning and garnish with basil or parsley. Serve hot.
Notes
Whisk in 1 tbsp cold butter off heat for extra gloss.
Loosen the sauce with 2–3 tbsp warm water or chicken broth if desired.
