Ingredients

8 large eggs

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter

1 pound breakfast sausage

1 1/2 cups shredded cheddar cheese

6 large flour tortillas (10-inch)

Optional: 1 cup hash browns, cooked

Optional: 1/2 cup diced bell peppers

Optional: hot sauce to taste


Instructions

1. In a large skillet, cook the breakfast sausage over medium heat, breaking it into crumbles. Cook until browned, then set aside on a paper towel-lined plate.

2. In a mixing bowl, whisk together eggs, milk, salt, and pepper until fully combined.

3. In a nonstick skillet over medium-low heat, melt butter and cook the egg mixture, stirring gently until soft curds form. Remove from heat before fully set.

4. Warm tortillas in a dry skillet or microwave with a damp paper towel to make them pliable.

5. To assemble: lay a tortilla flat, add scrambled eggs, cooked sausage, and shredded cheddar. Add optional ingredients as desired.

6. Fold sides in and roll tightly into a burrito shape.

7. Toast each burrito in a skillet for 1–2 minutes per side until golden and crisp.
