Ingredients
1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground nutmeg
¼ teaspoon salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
¾ cup eggnog
1 cup powdered sugar
2–3 tablespoons eggnog
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, nutmeg, and salt.
3. In a large bowl, beat butter and sugar until light and fluffy.
4. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
5. Alternately add the dry mixture and eggnog to the wet ingredients, mixing until just combined.
6. Pour batter into the prepared pan and smooth the top.
7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
8. Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9. Whisk powdered sugar and eggnog until smooth, then drizzle over cooled bread. Let set before slicing.
Notes
Don’t overmix the batter; it helps keep the texture soft and tender.
Let the glaze fully set before storing or slicing for best results.
