Description

Festive Reese Cup Ritz Cracker Cookies are the kind of salty-sweet holiday treat that disappears the second you set the plate down. Crunchy buttery Ritz crackers are sandwiched around creamy peanut butter cups and a ribbon of soft caramel, then dipped in smooth chocolate and topped with sprinkles and flaky sea salt. They’re a fun no bake dessert for Christmas cookie trays, party dessert tables, after school sweet snacks, and any time you want an easy recipe to satisfy those chocolate peanut butter cravings—even when you’re tired of hunting for new food ideas, breakfast ideas or dinner ideas.


Ingredients

48 Ritz crackers

24 miniature Reese’s peanut butter cups

20 soft caramel candies (about 5 ounces)

2 tablespoons heavy cream

12 ounces semisweet chocolate chips

1 tablespoon coconut oil or vegetable shortening

2 tablespoons holiday sprinkles

1 teaspoon flaky sea salt


Instructions

1. Line a large baking sheet with parchment paper or a silicone baking mat so the cookies do not stick.

2. Arrange 24 Ritz crackers, salted side down, in a single layer on the prepared baking sheet and place one miniature peanut butter cup on top of each cracker.

3. In a small microwave safe bowl, combine the soft caramel candies and heavy cream, then heat in 20 second bursts, stirring between each, until melted and smooth.

4. Spoon about a teaspoon of the warm caramel over each peanut butter cup, letting it gently drip toward the edges of the cracker.

5. Top each stack with a second Ritz cracker, salted side up, and press very gently to create a sandwich; chill the tray for 10 to 15 minutes to firm up the centers.

6. Place the chocolate chips and coconut oil in another microwave safe bowl and heat in 20 to 30 second bursts, stirring until the chocolate is fully melted and glossy.

7. Use a fork to dip each chilled sandwich cookie into the melted chocolate, turning to coat, then tap off the excess and return it to the parchment lined tray.

8. While the chocolate is still wet, decorate the tops with holiday sprinkles and a light pinch of flaky sea salt, then chill until the chocolate is set before serving.

Notes

For the neatest cookies, make sure the caramel and peanut butter cup centers are well chilled before dipping; if the filling is still warm, the sandwiches can slide apart in the melted chocolate.
