Ingredients
8 large eggs
1/2 cup heavy cream
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
2 oz cream cheese, cut into small chunks
1/2 tsp salt
1/4 tsp black pepper
1 tbsp fresh herbs (such as chives or basil), chopped (optional garnish)
Instructions
1. Preheat oven to 375°F and grease a cast iron skillet or ovenproof pan.
2. In a bowl, whisk eggs, heavy cream, salt, and pepper until smooth and slightly frothy.
3. Stir in cheddar, mozzarella, parmesan, and cream cheese.
4. Pour the egg mixture into the skillet and cook over medium heat for 4-5 minutes, until edges begin to set.

Notes
