Ingredients
12 ounces cheese tortellini
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup red bell pepper, diced
1/3 cup red onion, finely chopped
1/2 cup Italian dressing
1/4 cup grated Parmesan cheese
Instructions
1. Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions. Drain and rinse with cold water to cool.
2. While tortellini cooks, chop cucumber, red bell pepper, and red onion. Halve the cherry tomatoes.
3. In a large bowl, combine cooled tortellini with chopped vegetables and tomatoes.
