Ingredients
1 lb ground beef
0.5 cup finely chopped yellow onion
4 cloves garlic minced divided
1 teaspoon Worcestershire sauce
1 teaspoon yellow mustard
1 teaspoon kosher salt
0.5 teaspoon black pepper
0.5 teaspoon smoked paprika
8 flour tortillas 8 inch soft taco size
2 cups shredded cheddar cheese
3 tablespoons unsalted butter melted
1 tablespoon chopped fresh parsley
0.25 cup diced dill pickles optional
1 tablespoon sesame seeds optional
Instructions
1. Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish or line a sheet pan with parchment paper.
2. In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spatula, until mostly browned.
3. Add 2 cloves of the minced garlic and the chopped onion to the skillet. Cook for 3–4 minutes, stirring, until the onion is softened and the beef is no longer pink.
4. Drain any excess grease from the skillet if needed.
5. Stir in the Worcestershire sauce, yellow mustard, kosher salt, black pepper, and smoked paprika. Taste and adjust seasoning if desired, then remove from heat.
6. In a small bowl, whisk together the melted butter, the remaining 2 cloves minced garlic, and the chopped fresh parsley to make the garlic butter.
7. Lay the flour tortillas out on a clean work surface. Brush the inside of each tortilla lightly with some of the garlic butter.
8. Spoon a line of the warm beef mixture down the center of each tortilla, leaving a small border at the edges.
9. Sprinkle each tortilla with shredded cheddar cheese over the beef.
10. If using, add a spoonful of diced dill pickles on top of the cheese for extra cheeseburger flavor.
11. Roll each tortilla up tightly, tucking in the sides as you go, to form neat rollups. Place them seam side down in the prepared baking dish.
12. Brush the tops and sides of the rollups generously with more garlic butter.
13. Sprinkle any remaining cheddar cheese over the tops, and if desired, add a light sprinkle of sesame seeds.
14. Bake for 12–15 minutes, or until the tortillas are golden and crisp at the edges and the cheese is melted and bubbly.
15. Let the rollups cool for 3–5 minutes before serving so the cheese can set slightly and the filling doesn’t spill out.
16. Serve warm with extra pickles, ketchup, mustard, or your favorite burger sauce for dipping.
Notes
To keep the tortillas from splitting or unrolling, don’t overfill them and make sure they’re warm and soft before rolling; a quick 10–15 seconds in the microwave makes them much easier to wrap tightly.
