Ingredients

1 lb sirloin or ribeye steak, cut into cubes

2 tbsp olive oil

4 tbsp salted butter

4 garlic cloves, minced

2 tbsp fresh parsley, chopped

8 oz linguine pasta

1 cup heavy cream

1/2 cup cream cheese

1/2 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/3 cup grated parmesan cheese

Salt and black pepper to taste


Instructions

1. Cut steak into bite-sized cubes and season with salt and pepper.

2. Cook linguine in salted water until al dente. Reserve 1/2 cup pasta water. Drain and set aside.

3. Heat olive oil in a skillet over medium-high. Sear steak cubes for 2–3 minutes per side. Remove and set aside.

4. In the same skillet, melt butter. Add minced garlic and parsley; cook 1 minute until fragrant.

5. Return steak to skillet, tossing in garlic butter. Remove from heat.

6. In a saucepan, heat cream and cream cheese on low. Stir until smooth. Add cheddar, mozzarella, and parmesan. Stir until melted.

7. Add cooked linguine to sauce, tossing to coat. Add reserved pasta water if needed to thin.

8. Plate pasta with steak on the side. Garnish with parsley or parmesan if desired.

Notes

Use room temperature steak for even cooking and better sear.

Add a splash of white wine to the cheese sauce for an extra flavor boost.
