Ingredients

2 tablespoons butter

4 cloves garlic, minced

1/3 cup sun-dried tomatoes, chopped

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup vegetable broth

3/4 cup heavy cream

2 cans butter beans, 15 ounces each, drained and rinsed

1/2 cup grated Parmesan cheese

2 cups baby spinach

1 tablespoon lemon juice

2 tablespoons fresh basil, chopped

4 slices crusty bread, toasted


Instructions

1. Melt the butter in a large skillet over medium heat. Add the garlic and cook for about 30 seconds until fragrant.

2. Stir in the sun-dried tomatoes, Italian seasoning, red pepper flakes, salt, and black pepper. Cook for 1 minute.

3. Pour in the vegetable broth and heavy cream, stirring until combined. Bring to a gentle simmer.

4. Add the butter beans and cook for 5 to 7 minutes, stirring gently, until the beans are heated through and coated in the sauce.

5. Stir in the Parmesan cheese until melted. Add the spinach and cook until wilted.

6. Finish with lemon juice and fresh basil.

Notes
