Ingredients

450g chicken breast or thighs

3 cloves garlic, minced

60g freshly grated Parmesan cheese

50g sun-dried tomatoes, chopped

240ml heavy cream

1 tablespoon Cajun seasoning

1 tablespoon olive oil

1 tablespoon butter

200g broccolini

1 tablespoon fresh parsley, chopped

Salt and black pepper, to taste


Instructions

1. Cut chicken into bite-sized pieces and season with salt, pepper, and Cajun seasoning.

2. Heat olive oil and butter in a skillet. Sear chicken until golden and cooked through. Remove and set aside.

3. Preheat oven to 425°F. Toss broccolini with olive oil, salt, and pepper. Roast for 12–15 minutes.

4. In the same skillet, sauté garlic until fragrant. Add sun-dried tomatoes and a bit more Cajun seasoning.

5. Pour in heavy cream and let simmer. Stir in Parmesan until smooth and creamy.

6. Return chicken to the skillet and toss in sauce. Simmer for 2 minutes.

7. Garnish with fresh parsley and serve with charred broccolini.

Notes

Use freshly grated Parmesan for the best creamy texture.

Don’t skip the charred broccolini — it cuts the richness beautifully.
