Ingredients

12 oz rigatoni pasta

1 lb Italian sausage (casings removed)

4 cloves garlic, minced

2 tablespoons butter

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 cup reserved pasta water

1 tablespoon olive oil

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve 1/2 cup pasta water, then drain.
  2. In a large skillet, heat olive oil over medium heat. Brown the sausage, breaking it into small pieces, until fully cooked. Drain excess grease.
  3. Push the sausage to one side of the skillet. Add butter and minced garlic. Sauté for 1 minute until fragrant.
  4. Stir in the heavy cream and bring to a gentle simmer. Cook for 2-3 minutes.
  5. Add Parmesan cheese to the sauce and stir until melted and creamy.
  6. Toss in the cooked rigatoni, adding reserved pasta water as needed to create a silky sauce that coats the pasta.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped parsley and extra Parmesan if desired. Serve hot and enjoy!
