Ingredients

6 large eggs, hard-boiled and chopped

2 cups cherry tomatoes, halved

1/2 cup diced red onion

1/2 cup mayonnaise

1/4 cup sour cream

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon kosher salt, more to taste

1/4 teaspoon black pepper

2 tablespoons chopped fresh dill, plus more for garnish

1 1/2 cups coarsely crushed saltine crackers


Instructions

1. Place the hard-boiled eggs on a cutting board, peel, and chop them into bite-size pieces.

2. Halve the cherry tomatoes, dice the red onion, and finely chop the fresh dill. Add everything to a large mixing bowl.

3. In a separate bowl, whisk together the mayonnaise, sour cream, Dijon mustard, garlic powder, smoked paprika, kosher salt, and black pepper until smooth and creamy.

4. Pour the dressing over the eggs, tomatoes, onion, and dill. Gently fold with a spatula until all of the ingredients are evenly coated, keeping some larger chunks of egg for texture.

5. Just before serving, place the saltine crackers in a zip-top bag and lightly crush them into a mix of small pieces and coarse crumbs.

6. Sprinkle the crushed crackers over the salad and fold them in gently until combined.

7. Taste and adjust seasoning with extra salt or pepper if needed. Garnish with additional dill and serve immediately for the best crunchy texture.

Notes

For the best texture, don’t stir the crackers into the salad until just before serving—adding them too early will make the salad soggy instead of crunchy.
