Ingredients
1 ½ cups gluten-free all-purpose flour (with xanthan gum)
½ teaspoon baking soda
½ teaspoon cream of tartar
½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons granulated sugar (for coating)
1 teaspoon ground cinnamon (for coating)
¼ cup holiday gumdrops, halved
Instructions
1. Preheat oven to 350°F and line two baking sheets with parchment paper.
2. In a small bowl, combine 2 tablespoons sugar with cinnamon for rolling.
3. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
4. Beat in the egg and vanilla until well combined.
5. In a separate bowl, whisk together flour, baking soda, and cream of tartar.
6. Gradually add dry ingredients to wet ingredients and mix until just combined.
7. Scoop tablespoon-sized dough balls and roll them in cinnamon sugar.
8. Place on baking sheets and gently press 2–3 gumdrops into each dough ball.
9. Bake for 10–12 minutes until edges are set and centers are soft.
10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

These cookies spread slightly—leave space between them on the baking sheet.
