Ingredients
3 cups cooked shredded chicken
1/2 cup plain Greek yogurt
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
1 cup diced celery
3/4 cup diced cucumber
1/4 cup finely diced red onion
1/2 cup sliced kalamata olives
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh parsley
1/3 cup crumbled feta cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Add the cooked shredded chicken to a large mixing bowl and break up any large pieces.
2. Dice the celery, cucumber, and red onion, then slice the olives and chop the dill and parsley.
3. In a small bowl, stir together the Greek yogurt, mayonnaise, lemon juice, salt, and black pepper until smooth.
4. Add the celery, cucumber, red onion, olives, dill, parsley, and feta to the bowl with the chicken.
5. Pour the dressing over the salad and fold gently until everything is evenly coated.
6. Cover and chill for 20 to 30 minutes before serving for the best flavor.
