Ingredients

For the Muffins:

2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup unsalted butter, melted

2 large eggs

3/4 cup buttermilk

1 tsp vanilla extract

For the Cream Cheese Filling:

8 oz cream cheese, softened

1/4 cup powdered sugar

1/2 tsp vanilla extract

For the Cinnamon Streusel Topping:

1/4 cup all-purpose flour

1/4 cup brown sugar, packed

1/2 tsp ground cinnamon

2 tbsp unsalted butter, melted

For the Vanilla Glaze:

1 cup powdered sugar

2 tbsp milk

1/2 tsp vanilla extract

Instructions

  1. Preheat the Oven – Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Make the Cream Cheese Filling – In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
  3. Prepare the Streusel Topping – In another bowl, mix the flour, brown sugar, and cinnamon. Add melted butter and mix until crumbly. Set aside.
  4. Mix the Muffin Batter – In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
  5. Combine Wet Ingredients – In a separate bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract.
  6. Assemble the Muffins – Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  7. Fill the Muffin Cups – Spoon a little batter into each muffin cup, add a dollop of cream cheese filling, and top with more batter until the cups are about 3/4 full.
  8. Add Streusel Topping – Sprinkle the cinnamon streusel evenly over each muffin.
  9. Bake – Bake for 18–22 minutes or until a toothpick inserted into the muffin (not the cream cheese) comes out clean.
  10. Cool and Glaze – Let muffins cool slightly before drizzling with vanilla glaze. Serve warm and enjoy!
