Instructions
- Preheat the Oven – Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Make the Cream Cheese Filling – In a small bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.
- Prepare the Streusel Topping – In another bowl, mix the flour, brown sugar, and cinnamon. Add melted butter and mix until crumbly. Set aside.
- Mix the Muffin Batter – In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, and cinnamon.
- Combine Wet Ingredients – In a separate bowl, whisk together the melted butter, eggs, buttermilk, and vanilla extract.
- Assemble the Muffins – Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fill the Muffin Cups – Spoon a little batter into each muffin cup, add a dollop of cream cheese filling, and top with more batter until the cups are about 3/4 full.
- Add Streusel Topping – Sprinkle the cinnamon streusel evenly over each muffin.
- Bake – Bake for 18–22 minutes or until a toothpick inserted into the muffin (not the cream cheese) comes out clean.
- Cool and Glaze – Let muffins cool slightly before drizzling with vanilla glaze. Serve warm and enjoy!
