Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 large eggs
1 cup plain Greek yogurt
1/2 cup unsalted butter, melted
2 tablespoons fresh lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
1 cup powdered sugar
2 tablespoons fresh lemon juice
Instructions
1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan and line it with parchment paper if desired.
2. In a medium bowl, whisk together the flour, baking powder, and salt.
3. In a large bowl, whisk the sugar and eggs until smooth.
4. Add the Greek yogurt, melted butter, lemon zest, 1/4 cup lemon juice, and vanilla extract. Whisk until fully combined.
5. Add the dry ingredients to the wet ingredients and stir just until no dry streaks remain.
6. Pour the batter into the prepared loaf pan and smooth the top.
7. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.
8. Let the loaf cool in the pan for 10 to 15 minutes, then transfer it to a wire rack.
9. In a small bowl, whisk together the powdered sugar and 2 tablespoons lemon juice to make the glaze.
10. Drizzle the glaze over the cooled loaf, then slice and serve.
Notes
Do not overmix the batter once the flour goes in, or the loaf can turn out dense instead of soft and tender.
