2 slices sourdough bread
1 tablespoon butter
Optional: 1/4 cup caramelized onions, sliced jalapeños, or 2 slices cooked bacon
Instructions

2. Butter one side of each slice of bread.
3. On the unbuttered side of one slice, layer chicken mixture, cheddar, then mozzarella.
4. Top with the second slice, buttered side facing out.
5. Grill in a panini press or skillet over medium heat until golden and cheese is melted, about 3–5 minutes per side.
6. Let cool slightly, slice in half, and serve warm.
Notes
Pressing with a second pan while cooking ensures an evenly crisp exterior.
For an extra punch, use smoked cheddar or add spicy mayo inside the sandwich.
