Ingredients
4 cod fillets
2 cups cherry tomatoes
3 cloves garlic
1 tablespoon olive oil (for tomatoes)
1 tablespoon lemon juice (for cod)
1 tablespoon olive oil (for cod)
1/2 cup Greek yogurt
2 tablespoons mayonnaise
1 tablespoon lemon juice (for sauce)
1 tablespoon fresh dill (chopped)
Salt
Black pepper
Instructions
1. In a small bowl, mix Greek yogurt, mayonnaise, lemon juice, fresh dill, salt, and pepper. Refrigerate the sauce.
2. Preheat oven to 400°F. Toss cherry tomatoes and smashed garlic with olive oil, salt, and pepper. Roast for 15–20 minutes until blistered.
3. Pat cod fillets dry. Brush with olive oil, season with salt, pepper, and lemon juice.
4. Heat a grill or grill pan over medium-high. Oil the grates. Grill cod fillets 3–4 minutes per side until flaky and opaque.
5. Plate grilled cod, top with roasted tomatoes, and drizzle with creamy dill sauce. Garnish with more dill and lemon wedges if desired.
Notes
Be sure the grill is hot before placing the cod fillets to avoid sticking.
For a thicker sauce, add an extra spoon of Greek yogurt and let it chill longer before serving.
