Ingredients

1 tablespoon olive oil

1 pound ground turkey

1 cup diced carrots

1 cup chopped celery

1 small onion, diced

2 cloves garlic, minced

4 cups chicken broth

2 cups cooked white rice

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook for 5–7 minutes until vegetables are softened.

2. Add garlic and cook for another minute, stirring constantly.

3. Push the vegetables to one side of the pot and add ground turkey. Cook until browned and no longer pink, breaking it up with a spoon.

4. Season with salt and pepper. Pour in the chicken broth and bring to a gentle boil.

5. Lower heat and simmer for 15 minutes to blend the flavors.

6. Stir in the cooked rice and fresh parsley. Simmer an additional 5 minutes.

7. Taste and adjust seasoning if needed. Serve hot.
