1 ¾ cups all-purpose flour

½ cup granulated sugar
½ cup brown sugar, packed
2 large eggs
½ cup vegetable oil
1 teaspoon vanilla extract
1 cup grated carrots
1 cup grated apple (peeled)
½ cup chopped walnuts or pecans (optional)
Instructions
1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan or line with parchment paper.
2. In a large mixing bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
3. Add eggs, oil, granulated sugar, brown sugar, and vanilla extract to the dry mixture. Stir until just combined.
