Ingredients

1.5 pounds chicken breast, diced

1 cup uncooked white rice

1.5 cups carrots, diced

2 cups broccoli florets

1 small onion, chopped

2 cloves garlic, minced

2.5 cups chicken broth

1 cup cheddar cheese, shredded (optional)

1 teaspoon salt

0.5 teaspoon black pepper

1 teaspoon dried thyme (or parsley)


Instructions

1. Preheat oven to 375°F and lightly grease a 9×13 inch baking dish.

2. In a large bowl, mix rice, onion, garlic, carrots, and broccoli.

3. Place diced chicken on top and season with salt, pepper, and herbs.

4. Pour chicken broth evenly over everything.

5. Cover with foil and bake for 50 minutes.

6. Remove foil, add cheddar cheese on top (optional), and bake uncovered for another 10-15 minutes.

7. Let the casserole rest for 5-10 minutes before serving.

Notes

If using brown rice, increase the broth slightly and extend cooking time by 10-15 minutes.

You can swap broccoli for green beans, zucchini, or spinach depending on what you have on hand.
