Ingredients

1 cup mashed ripe bananas

1/2 cup Greek yogurt

2 large eggs

1/4 cup maple syrup

1 teaspoon vanilla extract

1 cup old-fashioned oats

3/4 cup whole wheat flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips (plus extra for topping)

Optional: banana slices for topping


Instructions

1. Preheat the oven to 350°F and line or grease a muffin tin.

2. In a large bowl, mash bananas and mix in Greek yogurt, eggs, maple syrup, and vanilla until smooth.

3. Add oats, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Mix gently.

4. Fold in chocolate chips, reserving a few for topping.

5. Divide batter into muffin cups, about 3/4 full. Top with extra chips and banana slices if desired.

6. Bake for 18–22 minutes or until a toothpick comes out clean.

7. Let cool for 5 minutes in the tin, then transfer to a wire rack.

Notes

Don’t overmix the batter to keep the muffins light and fluffy.

For a nutty crunch, add 1/4 cup chopped walnuts or pecans to the batter.
