Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

4 large eggs

1 ½ cups all-purpose flour

½ tsp baking powder

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp ground allspice

½ tsp salt

2 tbsp molasses

1 tsp vanilla extract

2 tbsp orange zest

½ cup orange juice

2 cups mixed dried fruit (golden raisins, currants, chopped apricots, cranberries)

1 cup chopped nuts (walnuts or pecans)

Optional: 2 tbsp dark rum or brandy


Instructions

  1. Combine dried fruits, zest, and optional liquor in a bowl. Cover and let sit for at least 1 hour.
  2. Preheat oven to 300°F (150°C). Grease and line a loaf pan.
  3. Cream butter and brown sugar until fluffy.
  4. Beat in eggs one at a time. Mix in molasses, vanilla, and orange juice.
  5. Whisk flour, baking powder, spices, and salt in a separate bowl.
  6. Fold dry mix into wet until just combined.
  7. Stir in soaked fruits and nuts.
  8. Pour into pan and smooth top.
  9. Bake 80–90 minutes, covering with foil if browning too quickly.
  10. Cool completely. Wrap and rest 24 hours before slicing.
