Ingredients
1 cup cooked spinach, chopped and drained
8 oz cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, minced (or 1/2 tsp garlic powder)
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
1 tablespoon fresh chives, chopped
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. If using fresh spinach, sauté in a skillet until wilted, cool, squeeze dry, and chop. If using frozen, thaw and squeeze dry.
2. In a bowl, mix cream cheese, sour cream, and mayonnaise until smooth.
3. Add spinach, garlic, lemon juice, parsley, dill, chives, salt, and pepper. Stir to combine.
4. Chill for 30 minutes before serving. Garnish with olive oil and fresh herbs if desired.
