Ingredients
1 pound ground beef
4 cups thinly sliced Yukon Gold potatoes
1 cup shredded cheddar cheese
1 small onion, diced
2 cloves garlic, minced
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. In a skillet, brown the ground beef with diced onion and garlic. Drain the grease and season with salt and pepper.
3. Slice potatoes into 1/4-inch rounds.
4. In a bowl, mix cream of mushroom soup with milk until smooth.
5. Layer half the potatoes in the baking dish, then half the beef mixture, half the soup mixture, and half the cheese. Repeat.
6. Cover with foil and bake for 45 minutes.
7. Remove foil and bake for another 15 minutes until golden and bubbly.
8. Rest for 5 minutes before serving. Garnish with parsley if desired.
