Ingredients

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1 large egg

1 cup almond flour

2 tablespoons all-purpose flour

1 teaspoon almond extract

1/2 teaspoon vanilla extract

1/4 teaspoon salt

4 croissants

1/4 cup sliced almonds

1 tablespoon powdered sugar


Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a medium bowl, beat the softened butter and granulated sugar until pale and fluffy.

3. Add the egg, almond extract, vanilla extract, and salt, then mix until smooth.

4. Stir in the almond flour and all-purpose flour until a thick, creamy filling forms.

5. Slice each croissant in half lengthwise and spread almond filling generously inside.

6. Spread a thin layer of filling on top of each croissant and sprinkle with sliced almonds.

7. Arrange the filled croissants on the prepared baking sheet.

Notes

Do not use melted butter for the filling, or it can turn loose and greasy instead of baking into a soft, creamy almond center.
