Ingredients

6 egg yolks

1 cup granulated sugar

2 tablespoons cornstarch

1 cup whole milk

1 cup heavy cream

1 teaspoon vanilla extract

1 teaspoon ground nutmeg

2 tablespoons salted butter


Instructions

1. In a saucepan, whisk together egg yolks, sugar, and cornstarch until smooth.

2. In another saucepan, heat milk and cream until warm (not boiling).

3. Slowly whisk the warm milk mixture into the yolks to temper.

4. Return everything to the stove and cook over medium-low heat, stirring constantly until thickened.

5. Remove from heat. Stir in vanilla, nutmeg, and butter until melted and smooth.

6. Let cool slightly and transfer to jars.

7. Chill for at least 2 hours to allow the jam to set.

Notes

Stir constantly while heating to avoid curdling.

For a deeper flavor, try freshly grated nutmeg instead of pre-ground.
