Ingredients

227g cottage cheese

2 large eggs

1 teaspoon vanilla extract

60g almond flour

30g unsweetened cocoa powder

80g granulated erythritol

1 teaspoon baking powder

1/4 teaspoon salt

50g sugar-free chocolate chips (optional)

Instructions

1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper. Lightly grease it.

2. In a blender or food processor, blend cottage cheese, eggs, and vanilla extract until smooth.

3. In a bowl, mix almond flour, cocoa powder, erythritol, baking powder, and salt.

4. Pour the wet mixture into the dry ingredients. Stir until just combined. Fold in chocolate chips.

5. Pour batter into the prepared dish and smooth the top. Add extra chocolate chips if desired.

6. Bake for 25–30 minutes, or until center is set but slightly soft.

7. Cool completely before slicing. Store in fridge for a fudgier texture.

Notes

Make sure the cottage cheese is blended fully for the creamiest texture.

Don’t overbake! The center should be just set for a rich, fudgy bite.
