Ingredients

4 large russet potatoes

3 cups vegetable oil (for frying)

1 tablespoon paprika

1½ teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

1 teaspoon black pepper

1 teaspoon salt

½ teaspoon white pepper (optional)

½ teaspoon oregano

½ teaspoon thyme

½ teaspoon sugar

Ketchup or dipping sauce of choice


Instructions

  1. Cut potatoes into thin fries and soak in cold water for at least 30 minutes.
  2. Mix all the spices in a bowl to create the Cajun seasoning.
  3. Drain and pat the fries completely dry.
  4. Heat oil to 325°F (163°C) and fry the potatoes in batches for 3-4 minutes (they should be soft, not browned).
  5. Remove and let rest on paper towels.
  6. Increase oil temperature to 375°F (190°C), and fry again for 2-3 minutes until golden and crispy.
  7. Drain and season immediately with Cajun spice blend.
  8. Serve hot with your favorite sauce.
