Ingredients

1 pound tomatillos, husked and rinsed

2 jalapeños or serrano peppers

3 cloves garlic, unpeeled

0.5 white onion, quartered

1 handful fresh cilantro

1 lime, juiced

0.5 teaspoon salt

2 tablespoons water (optional, for thinning)


Instructions

1. Preheat broiler and place tomatillos, peppers, garlic, and onion on a baking sheet.

2. Broil for 5–7 minutes, flipping once, until charred and soft.

3. Remove garlic skins and transfer everything to a blender or food processor.

4. Add cilantro, lime juice, salt, and blend until smooth.

5. Adjust with water for consistency and additional lime or salt to taste.

6. Chill in the fridge for at least 30 minutes before serving.

Notes

For spicier salsa, use serrano peppers instead of jalapeños.

Salsa thickens slightly as it chills—adjust consistency with water as needed.
