Description

Homemade Southwest Breakfast Casserole is the kind of easy breakfast recipe that makes everyone excited to sit down at the table. Loaded with eggs, sausage, hash browns, cheese, peppers, and green chiles, this hearty baked casserole is perfect for a quick breakfast, easy dinner, holiday brunch, meal prep, and family breakfast ideas. It is warm, filling, flavorful, and simple to make, making it one of my favorite food ideas when I need a comforting dish that works for both busy mornings and relaxed weekends.


Ingredients

8 large eggs

1 cup milk

1 pound breakfast sausage

3 cups frozen hash browns, thawed

1 1/2 cups shredded cheddar cheese

1 cup shredded pepper jack cheese

1 red bell pepper, diced

1 can green chiles, 4 ounces

1/2 cup sliced black olives

3 green onions, sliced

1 tablespoon taco seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

nonstick cooking spray


Instructions

1. Preheat the oven to 375°F and grease a 9×13-inch baking dish with nonstick cooking spray.

2. Cook the breakfast sausage in a skillet over medium heat until browned and crumbled, then drain the excess grease.

3. Spread the hash browns evenly in the prepared baking dish.

4. Top the hash browns with the cooked sausage, diced red bell pepper, green chiles, black olives, and half of the sliced green onions.

5. Sprinkle the cheddar cheese and pepper jack cheese evenly over the mixture.

6. In a large bowl, whisk together the eggs, milk, taco seasoning, salt, and black pepper until smooth.

7. Pour the egg mixture evenly over the casserole.

8. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden.

9. Let the casserole rest for 10 minutes before slicing.

10. Garnish with the remaining green onions and serve warm.

Notes

Do not skip draining the sausage well, because extra grease can make the casserole heavy and prevent the egg mixture from baking up with the best texture.
