Ingredients

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 carrots, sliced

2 celery stalks, sliced

2 cups green beans, trimmed and cut

4 cups cabbage, chopped

2 medium potatoes, peeled and diced

1 can diced tomatoes, 14.5 ounces

6 cups vegetable broth

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Heat the olive oil in a large soup pot over medium heat. Add the onion, carrots, and celery, then cook for 5 to 6 minutes until they begin to soften.

2. Stir in the garlic and cook for 30 seconds, just until fragrant.

3. Add the potatoes, green beans, and chopped cabbage, then stir everything together well.

4. Pour in the diced tomatoes with their juices and the vegetable broth.

5. Add the Italian seasoning, salt, and black pepper, then stir to combine.

6. Bring the soup to a gentle boil, then reduce the heat to low.

7. Simmer uncovered for 25 to 35 minutes, until the potatoes are tender and the cabbage is soft.
