Ingredients
1 cup cornmeal
1 cup all-purpose flour
1 cup mashed sweet potato
2 large eggs
1 cup buttermilk
1/3 cup honey
1/4 cup melted butter (plus more for brushing)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon (optional)
1/2 teaspoon salt
Instructions
1. Preheat oven to 400°F and grease a square baking dish or cast-iron skillet.
2. In a bowl, whisk together cornmeal, flour, baking powder, baking soda, cinnamon, and salt.
3. In another bowl, whisk together sweet potato, eggs, buttermilk, honey, and melted butter until smooth.
4. Add the wet mixture into the dry ingredients and mix until just combined.
5. Pour the batter into the prepared pan and smooth the top.
6. Bake for 22–28 minutes or until golden and a toothpick comes out clean.
7. While warm, brush the top with melted butter and drizzle with honey.
8. Let cool slightly before slicing and serving.
