Ingredients

1 lb boneless, skinless chicken breast, cubed

1 cup mushrooms, sliced

2 cups green beans, trimmed

1 tablespoon olive oil

Salt and black pepper, to taste

Honey Garlic Sauce:

1/3 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon cornstarch + 1 tablespoon water (slurry)

To Serve:

Steamed white rice (or brown rice)

Optional garnish: chopped parsley or green onions



Instructions

  1. Prep all ingredients: trim beans, slice mushrooms, cube chicken.
  2. Blanch green beans in boiling water for 2 minutes, then shock in ice water.
  3. In a skillet, heat olive oil and sear chicken until golden and cooked through. Remove and set aside.
  4. Sauté mushrooms in the same skillet until browned.
  5. Combine honey, soy sauce, garlic, and rice vinegar. Pour into skillet, then stir in cornstarch slurry until sauce thickens.
  6. Return chicken to the pan and toss to coat in the sauce.
  7. Serve over rice with green beans and garnish as desired.
