Ingredients

1.5 pounds baby potatoes

2 tablespoons Dijon mustard

2 tablespoons honey

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried thyme or Italian seasoning

1 teaspoon salt

0.5 teaspoon black pepper


Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

2. Wash and halve the baby potatoes.

3. In a large bowl, whisk together Dijon mustard, honey, olive oil, garlic powder, thyme, salt, and pepper.

4. Toss the halved potatoes in the honey mustard mixture until fully coated.
