Ingredients

1.5 lbs boneless skinless chicken thighs

1/3 cup hot honey

1/4 cup balsamic vinegar

8 oz Brussels sprouts, halved

1 tablespoon olive oil (for roasting Brussels)

4 oz feta cheese

2 oz cream cheese

1 teaspoon lemon juice

8 oz fettuccine or linguine pasta

1 cup heavy cream

3/4 cup grated Parmesan cheese

3 cloves garlic, minced

3 tablespoons butter

2 tablespoons olive oil (for chicken)

Salt and pepper to taste


Instructions

1. Toss halved Brussels sprouts with olive oil, salt, and pepper. Roast at 425°F until crispy.

2. Blend feta, cream cheese, lemon juice, and olive oil until smooth. Chill until ready to use.

3. Cook pasta in salted water until al dente. Reserve some pasta water, then drain.

4. Cut chicken into bite-size pieces, season, and sear in olive oil and butter until cooked through. Remove from pan.

5. In the same skillet, add hot honey and balsamic vinegar. Simmer until thick. Return chicken to coat in glaze.

6. In a clean skillet, melt butter and sauté garlic. Add cream, then Parmesan. Stir until smooth. Season with salt and pepper.

7. Toss pasta with Alfredo sauce. Use reserved pasta water to adjust consistency if needed.

8. Plate pasta with whipped feta, glazed chicken, and roasted Brussels chips. Serve hot.
