Ingredients

1.5 lbs steak (sirloin or ribeye), cubed

1.5 lbs baby potatoes, halved

4 cloves garlic, minced

4 tablespoons butter

2 tablespoons olive oil

1 teaspoon salt

0.5 teaspoon black pepper

2 tablespoons chopped fresh parsley

0.25 teaspoon red pepper flakes (optional)


Instructions

1. Cut baby potatoes in half (or quarters if large), then parboil in salted water for about 8 minutes until fork-tender. Drain and pat dry.

2. Heat olive oil in a large skillet over medium-high heat. Add potatoes cut-side down and sear until golden and crisp. Season with salt and pepper. Remove and keep warm.

3. In the same skillet, add more oil if needed. Place steak cubes in a single layer and sear undisturbed for 2–3 minutes. Flip and cook for another 2 minutes. Work in batches to avoid overcrowding.

4. Reduce heat to medium. Melt butter in the pan, add garlic, and sauté for 30 seconds until fragrant.

5. Toss steak bites back into the skillet and coat in the garlic butter sauce.

6. Return the potatoes to the pan and mix gently. Garnish with parsley and red pepper flakes.

7. Serve hot and enjoy!

Notes

Let the steak come to room temperature before cooking for the best sear.
