Ingredients

1 1/2 pounds Yukon Gold potatoes

1/4 cup olive oil

3/4 cup chicken broth

1/4 cup fresh lemon juice

4 cloves garlic

1 1/2 teaspoons dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon lemon zest

1 tablespoon chopped fresh parsley


Instructions

1. Preheat the oven to 400°F and lightly grease a baking dish.

2. Wash the potatoes and cut them into thick wedges.

3. In a bowl, whisk together the olive oil, chicken broth, lemon juice, minced garlic, oregano, salt, and black pepper.

4. Arrange the potato wedges in the baking dish and pour the lemon mixture over them.

5. Toss the potatoes gently so they are evenly coated, then spread them into a single layer.

6. Roast uncovered for 40 minutes.

7. Carefully turn the potatoes and spoon some of the pan juices over the top.

8. Roast for another 20 to 25 minutes, until the potatoes are tender inside and golden on the edges.

9. Sprinkle with lemon zest and fresh parsley before serving.

Notes

Do not crowd the potatoes too tightly in the baking dish, or they will steam instead of developing those golden roasted edges.
