Ingredients
1.5 lbs baby potatoes, halved
1 tbsp olive oil
1 tsp salt
0.5 tsp black pepper
2 cups green beans, trimmed
0.75 cup heavy cream
1 tsp garlic powder
0.5 tsp onion powder
1 cup shredded white cheddar cheese
0.5 cup cranberries (fresh or dried)
Instructions
1. Preheat oven to 400°F. Toss baby potatoes with olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until browned.
2. Add green beans to the pan with the potatoes. Roast for another 15 minutes until tender-crisp.
3. Transfer vegetables to a baking dish. Pour in heavy cream, add garlic and onion powder, and mix in half the cheese.
4. Top with cranberries and remaining cheese. Bake for 10-15 minutes more, until bubbly and golden.
5. Let rest 5 minutes before serving. Garnish with cracked pepper or herbs if desired.
Notes
Make sure potatoes are evenly cut for consistent roasting.
Use fresh cranberries for a brighter tang or dried for a sweeter finish.
