Ingredients

16 oz baby bella mushrooms

8 oz cream cheese, softened

2 cloves garlic, minced

3 green onions, chopped

1/4 cup grated Parmesan cheese

1/4 cup panko breadcrumbs

1 tablespoon olive oil or melted butter

1 tablespoon chopped parsley (optional)

Salt and pepper to taste


Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. Clean mushrooms gently with a damp towel and remove the stems. Optional: finely chop stems to use in filling.

3. In a mixing bowl, combine softened cream cheese, garlic, green onions, Parmesan, and optional chopped stems and herbs.

4. Stuff each mushroom cap with a generous spoonful of the mixture.

5. Sprinkle the tops with panko breadcrumbs and a little more Parmesan.

6. Drizzle or brush lightly with olive oil or melted butter.

7. Bake for 18–20 minutes until mushrooms are tender and tops are golden brown.

8. Serve warm and garnish with extra parsley if desired.
