Ingredients

24 cocktail sausages

12 slices streaky bacon

3 tablespoons brown sugar

2 tablespoons whole grain mustard

2 tablespoons maple syrup

1 tablespoon soy sauce

1 teaspoon fresh thyme leaves (optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Cut each bacon slice in half and wrap around each sausage.

3. Place seam-side down on a lined baking sheet.

4. Bake for 20–25 minutes until bacon is crispy, turning halfway.

5. Meanwhile, in a saucepan, combine brown sugar, mustard, maple syrup, and soy sauce.

6. Simmer glaze for 5–7 minutes until slightly thickened.

7. Pour glaze over cooked sausages and toss to coat.

8. Return to oven for 8–10 more minutes until sticky and caramelized.

9. Garnish with fresh thyme if desired and serve warm.

Notes

For extra crispiness, use a wire rack over your baking tray so the bacon renders evenly.
