Ingredients

16 oz cream cheese, softened

1 cup shredded sharp cheddar cheese

1/3 cup chopped salami or pepperoni

1/4 cup chopped sun-dried tomatoes

1/4 cup chopped green or black olives

1/4 cup chopped roasted red peppers

2 tbsp chopped fresh parsley or basil

1 tsp garlic powder

1/2 tsp crushed red pepper flakes (optional)

Salt and pepper, to taste

1/3 cup finely chopped crispy bacon (for topping)

1 tbsp chopped rosemary (for topping)

Crackers or crostini for serving


Instructions

  1. In a bowl, mix softened cream cheese and shredded cheddar until smooth.
  2. Fold in salami, sun-dried tomatoes, olives, peppers, and herbs.
  3. Season with garlic powder, red pepper flakes, salt, and pepper.
  4. Spoon mixture onto plastic wrap, shape into a log, and chill for 1 hour.
  5. Mix bacon and rosemary in a small bowl.
  6. Unwrap chilled log and coat the top with bacon-rosemary topping.
  7. Garnish with additional herbs or sun-dried tomatoes if desired.
