Ingredients

1 tablespoon butter

1 small yellow onion, finely chopped

3 cloves garlic, minced

3 tablespoons all-purpose flour

6 cups chicken broth

1 cup heavy cream

2 cups cooked shredded chicken

8 lasagna noodles, broken into bite-size pieces

3 cups baby spinach

1 cup ricotta cheese

1 cup shredded mozzarella cheese

3/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes

2 tablespoons chopped fresh parsley


Instructions

1. Melt the butter in a large soup pot over medium heat. Add the chopped onion and cook for 4 to 5 minutes until softened. Stir in the garlic and cook for 30 seconds.

2. Sprinkle the flour over the onion mixture and stir well for 1 minute to cook out the raw flour taste.

3. Slowly pour in the chicken broth while stirring, then add the heavy cream, Italian seasoning, salt, black pepper, and red pepper flakes.

4. Bring the soup to a gentle simmer and add the broken lasagna noodles. Cook for 10 to 12 minutes, stirring occasionally, until the noodles are tender.

5. Stir in the shredded chicken and baby spinach. Cook for 2 to 3 minutes until the chicken is heated through and the spinach has wilted.

6. Lower the heat and stir in the ricotta, mozzarella, and Parmesan until melted and creamy.

7. Taste and adjust seasoning if needed. Ladle into bowls and top with chopped parsley before serving.

Notes

Do not boil the soup after adding the cheese and cream, or the broth can turn grainy instead of staying smooth and silky.
