Ingredients

3 pound top round roast

2 tablespoons olive oil

1 tablespoon kosher salt

2 teaspoons freshly ground black pepper

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme leaves

1 cup beef broth

2 tablespoons unsalted butter


Instructions

1. Remove the roast from the refrigerator 45 to 60 minutes before cooking to bring it to room temperature.

2. Preheat the oven to 450°F.

3. Pat the roast dry with paper towels. Rub with olive oil, then season evenly with salt, pepper, garlic, rosemary, and thyme.

4. Place the roast on a rack in a roasting pan and roast at 450°F for 15 minutes to develop a crust.

5. Reduce oven temperature to 325°F. Add beef broth and butter to the pan.

6. Continue roasting until the internal temperature reaches 125°F for medium-rare or 135°F for medium.

7. Remove from oven, tent loosely with foil, and rest for 15 to 20 minutes.

8. Slice thinly against the grain and spoon pan juices over the top before serving.

Notes

Do not overcook the roast. Because top round is lean, cooking beyond medium can make it tough. Always use a meat thermometer and remove it slightly before your target temperature since it will continue cooking while resting.
